Indie Candy specializes in gourmet candies that are naturally
allergen free. We create our own confections in-house as well
as carrying the best of the allergen free candies currently on the
market, particularly those from independent makers. Since I
have a serious gluten intolerance and a less serious, but no less
annoying, intolerance to milk and soy plus a child with multiple
food allergies/sensitivities, I am my own customer. That means
that I strive to create the most delicious products available
because I am the one eating them!

All of our products are free of artificial colors, flavors and
preservatives. A 2007 study in the Lancet showed that certain
food dyes can create a hyperactive response in otherwise
normal children. That study and others prompted the EU and
most other industrialized nations to require food companies to
eliminate certain food dyes from the food supply. We take it one
step further and make delicious and beautiful candy only with
fruit, vegetable and spice extracts instead of artificial colors and
flavors. We use the Feingold Diet program as a guideline for our
products which means that the candies are also free of TBHQ,
BHT and BHA as well as no artificial colors and flavors.

Our commitment is to provide the best tasting and most
thoughtfully produced candies available, regardless of dietary
restriction. Our in house artisan candies are free of Big 8
allergens: eggs, peanuts, treenuts, wheat, soy, dairy, fish and
shellfish. There are no Big 8 allergens in the kitchen at all. We
carry candies that are suitable for a variety of special diets -
GFCFSF, vegan and Feingold friendly - to name a few. The
ingredients in our house made products are all Kosher certified.
Also, the majority of our ingredients are organic.

The Sjaak’s Story began on the Southern
beaches of Spain. This is where Jacques
and Pam met and fell in love. They soon
came back and settled in Eureka (northern
ca.) where Pam had grown up. They began
a Chocolate business that grew into a
household name in their community. After
years of building a thriving business, they
realized that they needed to shift their
attention to organic products. Being long
time vegetarians (since 1970) and health
conscious consumers themselves, they
felt they needed their personal beliefs
reflected in their business, thus the
beginning of Sjaak’s Organic chocolates.)
Matt prides himself on having cookies that bend, but don't
break. Softer cookies drove everyone into the cookie aisles as
Matt's Cookies gained popularity in the early 80's, and by 1986,
8 out of every 10 stores in Illinois, Wisconsin and St. Louis
sold Matt's Cookies.

To control freshness, and to keep prices low, Matt eliminates
"Middlemen". He deals directly with the stores. The entire
Pierce Family works hard, every day, to live up to the
reputation of "THE Homemade Style Store-Bought Cookies".
When I got married years ago I had never even
heard of “All Natural” foods. I just thought all food
was simply “natural”. Fourteen years, two children,
two dogs, two cats and about a million goldfish
later, you could say that my life has changed
dramatically. I have learned a lot about food and
food ingredients. I now know that “natural” means
the way food is meant to be - wholesome, pure,
delicious and heavenly.

When our older son turned ten not long ago we had
to switch his school. Up to this point, we had never
exposed him to foods that were not all natural or
organic. After a couple of weeks at the new school,
he came home one day with a sad look on his face
and said “Why can’t I have the same snacks as the
other kids?” He had seen the other side and talking
about high fructose corn syrup, artificial flavors,
colors and additives with a ten year old is futile.
I knew this wasn’t going to be easy – he has
inherited his mother’s resolve. After a couple of
weeks of mulling over it, he won and Q.bel was born.

So, who taught me so much about good, wholesome
and healthy food among other things? Well, my wife
Isabel of course. And Q.bel is a tribute to Isabel’s
passion in bringing the highest Quality food
ingredients into our life.
Any history of Immaculate Baking begins with Scott Blackwell's story. At 7, he sees the movie, Willy Wonka & The
Chocolate Factory and sends away for the "Make Your Own Wonka Bar" Kit. Scott peddles his handmade
chocolates to neighbors out of his wagon. His great-grandmother teaches him how to bake, and his love for
chocolate, baking, and whimsy are solidified!

Scott later uses his baking skills to pay for college with a cash-only pie business, serving 28 local restaurants.
While building pie boxes one night, Scott sees 2 wacky guys on tv named Ben & Jerry. 3 months later, Scott is the
9th distributor in the country for Ben & Jerry's Ice Cream. In 1989, Scott sells his Ben and Jerry's distribution,
moves to Columbia, SC, and opens Immaculate Consumption on Main Street. The restaurant sells all natural
sandwiches, baked goods, and fresh roasted coffee and espresso. Always resourceful, Scott makes tables out of
old doors and uses leftover furniture from the previous tenant to make counters. A 1950s, avocado green
refrigerator purchased from a salvage yard houses the prep ingredients.

Scott attends his first trade show in 1997 at Atlanta's AmericasMart. On a tight budget, he builds his booth by hand
in his backyard for a total cost of 27 bucks. The booth design wins Best in Show!

Scott takes the cookies clear across the country for their West Coast debut at the NASFT Fancy Food Show in San
Francisco. It's a true success, considering a man named Chuck Williams exits the show with multiple Apple Pie
cookies in his pocket. Scott receives an order - at his garage -- from Williams-Sonoma the following week.

Marking the 1999 birth of Liam, his first child, Scott creates Leapin' Lemon, Immaculate's lemon white chocolate
best seller. The following year, Leapin' Lemon wins the award for Most Outstanding Cookie in America at the
Summer Fancy Food Show in New York.

In 2008, Paul Nardone comes on board as CEO and frees up Scott for more innovation. And innovate, he does. Scott
is passionate about food and develops all of Immaculate's recipes himself.

The Really Healthy Stuff Company was started by
Bianca Oliveira Riethmueller together with
Heather Flaherty, RN.  Really Healthy Stuff (or
REHEST) was inspired by the daily challenges
Heather Flaherty faces in addressing the special
dietary needs of her son Aidan.  Heather managed
to recover Aidan from Autism Spectrum Disorder,
in particular through dietary intervention.  Aidan
also suffers from severe food allergies. Today,
Aidan is no longer considered on the autism
spectrum.  Inspired by Heather's relentless and
ultimately successful journey, Bianca Oliveira
Riethmueller, an entrepreneur and a mother
herself, started REHEST together with Heather.
The Surf Sweets brand was inspired by fun, healthy lifestyles
and food choices. Sunny days on the beach, riding a few
waves, and enjoying the best candy on the planet – what
could be better?

Since we love candy and eat it regularly, we thought it made
sense to offer candy that not only tastes fantastic, but that is

The story of The Squirrel's Nest and its candy has traveled worldwide since 1980. Customers have chosen our
product to represent their hometown of Middletown or their home state of Delaware when traveling abroad. What an
honor this has been!

With our chocolate confections people always want the story to share. The story of a blue eyed, blond haired little
boy named Jason and our candy come hand in hand. When Jason was 2 1/2 we learned he was sensitive to artificial
colors and flavors. It affected the way he felt about himself and the way he treated others.

To provide Jason with candy, I learned the art of candy making from Mammy, my Pennsylvania Dutch mother in law. I
soon learned from sharing these sweets with others that people preferred the taste of real butter and pure vanilla. In
1980 this candy was made available through The Squirrel's Nest.


That year for Christmas we received a book by Dr. Benjamin Feingold. Dr. Feingold’s research shows that many
people have sensitivities to artificial flavors, fragrances, colors, and some preservatives. It helped to know my son
was not unique with this situation. Parent’s whose children have been diagnosed with ADHD, ADD, autism, learning
disabilities, and allergies were looking for a natural alternative to medication. The Feingold® program seems to be
the answer.

Jason's little brother Adam was diagnosed with dyslexia during his first year at school. The neurologist suggested
taking the artificial foods from his daily diet. This would not take away the learning disability but might make it easier
for him to better cope with the situation.

We often joke that things come in three’s. The third: it was soon discovered that through a chemical over-exposure
at work my husband, Jim, contracted multiple neurotoxicologic sequelae secondary to a pesticide exposure
resulting in multiple chemical sensitivity. Due to the past experiences with my sons and the information gained from
Feingold, it did not take me long to put things together and realize what Jim should avoid as well.

In 1990, I decided to offer my products by mail to Feingold members. The same month, Jason was diagnosed with  
rhabdomyosarcoma a rare form of cancer. Jason felt very strongly about Feingold and the importance of a natural
diet. He didn’t want his illness to change my decision.

Jason died one month before his 16th birthday in 1991. By helping thousands of children, I realized that it was
helping me to fill some of the huge void left in my life by his passing. When we go through something as devastating
as the loss of a child we can’t possibly imagine that anything good could ever result from it. But as time heals God
puts opportunities in front of us that give us the chance to help others by using the knowledge we have gained or just
the compassion to understand.

Like any other experience in life, most people wouldn’t or couldn’t understand unless they have been there.

For me, the motivation to keep going continues, knowing that families like yours are counting on me. I continue to
search for and provide new products to offer you in addition to my chocolates.

What started out as a special need for Jason now fills the needs of families all across the United States. Candies
with real butter and pure vanilla fill Easter baskets and Christmas stockings miles away from our quaint little shop in
Middletown.

Mike and Jane Rice represent the company’
s third generation of family leadership.  
Mike’s grandparents, Bill and Salie Utz,
founded Utz Quality Foods, Inc. in November
of 1921.
In 1997, Coco Polo/YC Chocolate was
created solely as a sugar free company,
using the newly introduced natural
sweetener Maltitol.  This allowed us to
concentrate on a product line addressing
the growing demand for healthier
chocolate, all natural without the
processed sugars, while maintaining
chocolate's distinctive antioxidants and
taste enjoyment.  

Coco Polo/YC was the first U.S. company
to manufacture an all natural sugar
free chocolate for use exclusively in our
products.

As a result of our first exposure to the
natural community at the Natural Products
Show East and the NY Fancy Food Show,
our chocolates won the Best of Aisle
awards in 1999 and 2000 by Gourmet
Retailer Magazine at the New York Fancy
Food Show, was voted One Of The Hottest
New Products by the N.A.S.F.T.
(National Association for the Specialty
Food Trade) Magazine in Christmas
2000 and won second place in the Best
Tasting Chocolate category competing
against sugar sweetened chocolates at
the Natural Products Show East.

In the Fall of 2011, after over a decade of
waiting for the government approval
of Reb A (an extract of Stevia) and
revising our formulas many times to
develop
a pleasurable tasting chocolate with the
most responsible and desirable of
sweeteners available, we now offer the
Cadenza line of 70% Cocoa dark
chocolate bars sweetened with Stevia.  
The Cadenza bars have a full bodied
natural sweetness with taste  
characteristics belonging to noteworthy
high
cocoa chocolates, but, now liberated
from processed sugar.
